Poached Kippers

Ingredients
  Kipper fillets 8
  Butter 6 Tablespoon
  Lemon juice 2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Parsley sprigs 1
  Lemon wedges 2
Directions

Place kipper fillets in a large saucepan with the skins facing up.
Cover with cold water and slowly bring to a boil.
As soon as the water boils, remove from heat, drain well and place on a warmed serving dish with the skin side down.
Garnish with parsley.
Melt the butter and stir in the lemon juice and pepper.
Pour over kippers at the table and serve with boiled new potatoes and lemon wedges.
