Continental Beef Bounty

Ingredients
  Bermuda onion 1 , sliced
  Vegetable shortening 2 Tablespoon
  Sweet italian sausage 2 , sliced
  Lean beef 2 Pound (For Stewing)
  All purpose flour 3 Tablespoon
  Carrots 1 Pound, pared, cut into 2 inch lengths
  Mixed vegetable juice 2 Can (20 oz)
  Salt 1 1⁄2 Teaspoon
  Peppercorns 10
  Bay leaves 2
  Cauliflower head 1 Small
Directions

MAKING
1. In a frying pan, saute onion slices in shortening till soft; lift with a slotted spoon and add to a twelve cup baking dish, brown the sausages in the drippings and add with the onion
2. Trim the fat from the beef and cube it; add to a paper bag with flour in it, shake to coat and brown in the same frying pan; add to the onions along with carrots
3. In the pan, add vegetable juice and salt and heat to a boiling; scrape any browned bits and pour it over the meat mixture
4. In a small piece of cheesecloth, tie peppercorns and bay leaves and place it in the baking dish; cover the dish and bake at 350°F for an hour and a half
5. Trim cauliflower and brake it into flowerets; in a medium saucepan boil water and parboil the cauliflowers for five minutes and drain; make the GOLDEN DUMPLING PUFFS
6. Into the stew mixture, add cauliflower and celery and drop the dumplings batter on top in eight mounds
7. Bake without a lid for another hour and remove the seasoning bag before serving

SERVING
8. Serve as appropriate
