Brochettes On Charcoal

Ingredients
  Salt 1 1⁄2 Tablespoon
  Bay leaves 3
  Peppercorns 8
  Onion 2 Tablespoon, grated
  Garlic 1 Clove (5 gm), crushed (Large Clove)
  Lemon juice 1⁄4 Cup (4 tbs)
  Dry red wine 1⁄4 Cup (4 tbs) (Canadian)
  Olive oil 1⁄3 Cup (5.33 tbs)
  Chicken livers 1⁄2 Pound
  Tender beef 1 Pound, cut in 1 1/2" cubes
  Green pepper cubes 1⁄2 Cup (8 tbs)
  Small white onions 1⁄2 Cup (8 tbs), partially cooked
  Bacon 1⁄2 Pound
  Cherry tomatoes 2
Directions

GETTING READY
1. In a large bowl, combine the curry powder, salt, bay leaves, peppercorns, grated onion, crushed garlic, lemon juice, wine and olive oil
2. Tip in the chicken livers and beef cubes into the mixture
3. Add the green peppers and onions to the mixture and let it marinate for 4-12 hours
4. Drain and set the marinade aside till required
5. Line broiler tray with foil

MAKING
6. Roll the chicken livers in bacon
7. Prepare a skewer by alternately skewering the marinated meat, green pepper, onions and tomatoes on the skewer
8. Brush the kebabs on the tray
9. Broil 15 to 20 minutes, turning and basting often until kebabs are browned on all sides.

SERVING
10. Serve on buttered bows immediately
