Salt Cod With Almonds And Pine Kernels

Ingredients
  Salt cod 1 Pound, soaked for 48 hours - changing the water twice (450 Gram)
  Salt water To Taste, soaked
  Olive oil 1⁄4 Pint (150 Milliliter For Deep Frying)
  Almonds 2 Ounce, roasted (50 Gram)
  Pine kernels 2 Ounce (50 Gram)
  Garlic 3 Clove (15 gm)
  Tomatoes 12 Ounce, skinned (350 Grams)
  White wine 1⁄4 Pint (150 Milliliter)
  Fish stock 1⁄4 Pint (150 Milliliter)
  Parsley 1 Tablespoon (For Garnish)
Directions

GETTING READY
1. Drain the salt cod
2. Wipe it dry on the kitchen paper

MAKING
3. Flour the fish
4. Fry the fish on both sides in olive oil till done
5. In a blender, puree the almonds, pine kernels, garlic and tomatoes.
6. Add the mixture to the fish
7. Tip in the white wine and the fish stock
8. Cook gently till the fish is done

SERVING
9. Sprinkle the fish with the parsley
