Homemade Biscuit Mix
|Whole wheat pastry flour||4 Cup (64 tbs)|
|Unbleached white flour||4 Cup (64 tbs)|
|Baking powder||1⁄4 Cup (4 tbs)|
|Shortening||1 1⁄2 Cup (24 tbs)|
1) Sift the flour, salt and baking powder together.
2) Cut in the shortening until the mixture has an even breadcrumb texture.
3) Store this mixture in a covered container in the refrigerator to use later as a basic mixture for the biscuits, dumplings, shortcake, waffles and muffins by adding milk to prepare the dough.
4) Use as required.
