|Onion||2 Tablespoon, finely chopped|
|Garlic||1 Clove (5 gm), minced|
|Green bell pepper||2 Tablespoon, finely chopped|
|Mild salsa||2 Tablespoon|
|Monterey jack cheese||2 Ounce, shredded|
1. Melt butter in large frying pan. Saute onions, garlic, and pepper until soft.
2. Beat eggs until light and pour into frying pan. Cook over very low heat, stirring constantly. When eggs begin to harden, add salsa, continuing to cook and stir until eggs are set.
3. Add cheese, stir, Serve immediately.
