Eggs Continental

Ingredients
  Hard cooked eggs 4 , sliced
  Fine soft bread crumbs/Corn-flake crumbs 3⁄4 Cup (12 tbs)
  Mushrooms 1⁄4 Pound, sliced
  Bacon slices 3 , slivered and cooked crisp
  Dairy sour cream 1 Cup (16 tbs)
  Minced parsley/Chives 2 Tablespoon
  Salt To Taste
  Paprika To Taste
  Grated sharp cheddar cheese 1⁄2 Cup (8 tbs)
Directions

1.Spread the crumbs in an 8-inch pie plate or small shallow casserole and arrange the sliced eggs on top.
2.Saute the mushrooms lightly in the bacon fat.
Stir in the bacon, sour cream, parsley, and salt and paprika to taste.
Spread over the eggs.
3.Sprinkle the top with the cheese and more paprika and bake in a moderate oven, 375°, 15-20 minutes, or until the sauce is bubbly and the cheese melted.
