|Dry curd cottage cheese||1 Cup (16 tbs)|
|Sour cream||1⁄2 Cup (8 tbs)|
|Lemon juice||1⁄2 Tablespoon|
|Butter/Margarine||2 Tablespoon, softened|
1. Prepare crepes.
2. Combine cheese, sour cream, egg, sugar and lemon juice. Place crepes with most attractive side down. Spoon about 1 tablespoon of cheese mixture onto center of each crepe. Fold two sides over to meet in center. Then, fold other two sides in so they overlap and enclose filling. Place folded-side-down on tray or plate.
3. Preheat microwave browning grill for 4 1/2 minutes on HIGH. Spread top side of each blintz with butter. Arrange half of blintzes buttered-side-down on preheated grill.
4. Microwave for 1 minute on HIGH. Turn blintzes over and continue cooking for 1 1/2 to 2 minutes, on HIGH, or until heated through.
5. Reheat microwave browning grill for 3 minutes on HIGH. Continue cooking remaining blintzes as directed.
