|Tortillas||6 (Corn Or Flour)|
|Poached eggs/Fried eggs||6 , hot|
|Garnishes||1⁄2 Cup (8 tbs) (sliced avocado, sliced radishes, shredded jack or mild Cheddar cheese)|
Prepare sauce and keep warm.
In an ungreased heavy frying pan over medium-high heat, place tortillas, one at a time, and heat until soft and hot (about 30 seconds on each side).
Put immediately into a covered ovenproof container or foil packet; keep in a 200° oven until all tortillas are heated.
For each serving, place 1 tortilla on a plate; top with a well-drained poached or fried egg and about 1/2 cup sauce.
Sprinkle with garnish of your choice.
