Prunes In Port Compote
|Dried prunes||1 Pound (Large Sized, 500 Gram)|
|Water||1 Cup (16 tbs) (250 Milliliter)|
|Port||1 Cup (16 tbs) (250 Milliliter)|
|Granulated sugar||1⁄4 Cup (4 tbs) (50 Milliliter)|
|Orange slices||6 (Thin Slices)|
|Whipping cream||1 Cup (16 tbs) (250 Milliliter)|
|Slivered almonds||25 Milliliter, toasted (2 Tablespoon)|
In medium saucepan, combine prunes, water, port, sugar and orange slices.
Stir gently, cover and bring to boil; reduce heat and simmer until prunes are puffed and tender, 20 to 30 minutes.
Pour into large shallow dish and chill, stirring once or twice to speed cooling.
With slotted spoon, remove orange slices and set aside.
Spoon prunes into 6 parfait or stemmed glasses and pour in liquid.
Whip cream and spoon over prunes.
Sprinkle with almond slivers.
Halves reserved orange slices and use to garnish parfaits.
