Exotic Apple Compote
|Golden delicious apples||2|
|Granny smith apple||1|
|Pineapple||2 Pound (1 Pineapple)|
|Superfine caster sugar||3 Tablespoon|
|Lime juice||1⁄4 Cup (4 tbs)|
|Golden raisins||2 Ounce (Sultanas)|
Peel and core the apples, quarter and slice the quarters thinly.
Cut off the 2 ends of the pineapple.
Put on a board and peel from top to base with a large knife.
Cut into 8 lengthwise and remove the core.
Chop into cubes.
Put the apples and pineapple in a casserole and sprinkle with the sugar and cinnamon.
Pour over the lime juice and stir well.
Cover and microwave on HIGH for 5 minutes.
Rinse the raisins (sultanas) under plenty of cold running water.
Pat dry on kitchen paper.
Peel the mango, remove the pit (stone) and cut the flesh into cubes.
Add the raisins (sultanas) and mango to the casserole and stir.
Cover and microwave on HIGH for a further 5 minutes.
Pour the Kirsch over the compote and refrigerate
