Cut lemons into thin slices.
Stick cloves into rind of each slice.
Combine sugar and water in saucepan and bring to a boil.
Cut apples into quarters and core.
Peel only if skins appear blemished or very tough.
Drop into sugar syrup along with lemon slices.
Add a few drops of red food coloring if desired.
Simmer until apples are tender and slightly transparent.
