I am a big lover of compote, it is so versatile, effortless and I have yet to meet anyone who does not love it. This is a family friendly recipe that can be used on ice creams, pancakes, toast, punches, as a sweet accent to pork chops, or even in your next cherry pie. I love that the Stemilt cherry season lasts until September, I can make a pot of this and still enjoy fresh cherries while I watch the first leaves falling out side.
Fresh stemilt cherries | 5 Cup (80 tbs) , pitted | |
Orange juice | 1 Cup (16 tbs) | |
Sugar | 1/2 Cup (8 tbs) |
GETTING READY:
1. Bring all ingredients to a boil in a large saucepan
2. Then, reduce heat to low allowing them to simmer for 10 minutes until cherries are soft.
MAKING:
3. Once soft, transfer the cherries to a medium heatproof bowl and continue to simmer for a further 20 minutes until the sauce is thick enough to coat the back of a spoon.
SERVING:
4. Once reduced, pour the reduced sauce over cherries and serve warm or allow to cool before storing in an air tight jar.
