Nutrition Coach Ingrid DeHart with a simple delicious spring dessert. I found beautiful rhubarb at the store yesterday. I am so excited to make this, it only takes 10 minutes.

1) Put cut up rhubarb and strawberries into a saucepan.
2) Turn on heat to low.
3) Add stevia and sweetener and mix to combine.
4) Turn heat down to very low, cover, cook for 5 minutes.
5) Remove cover, stir and simmer, still on very low, with the cover off for 3-5 minutes more until
strawberries are tender but not mushy.
If you have fresh strawberries and rhubarb, then it’s time for a great compote! A beautiful red blend, this sweet delight goes well over cereal, ice cream or even yoghurt. 15 minutes is all that this takes!!
