Three Melon Compote
|Flaked unsweetened coconut||1⁄4 Cup (4 tbs)|
|Freshly squeezed orange juice||1⁄2 Cup (8 tbs)|
1) Scoop out melon balls from cantaloupe, honeydew, and watermelon with a melon bailer, discarding seeds.
2) In a glass bowl, toss the melon balls with coconut flakes and orange juice.
3) Cover and refrigerate until chilled.
4) Toss again and serve the Three Melon Compote chilled.
