Puny's Brandied Fruit Compote

Ingredients
  Dried apricots 1 1⁄2 Cup (24 tbs), coarsely chopped
  Pears 1 Cup (16 tbs), coarsely chopped
  Pitted prunes 1 Cup (16 tbs), coarsely chopped
  Dried cranberries 1 1⁄2 Cup (24 tbs)
  Dried apples 2 Cup (32 tbs), coarsely chopped
  Cherries 1 Cup (16 tbs), dried
  Brown sugar 1⁄2 Cup (8 tbs)
  Brandy 1⁄2 Cup (8 tbs)
  Unsalted butter 1⁄4 Cup (4 tbs)
  Salt 1⁄2 Teaspoon
  Lemon juice 1 Tablespoon
  Lemon zest 1 Tablespoon
  Orange zest 1 Tablespoon
  Water 3 Cup (48 tbs)
Directions

Combine the dried fruit in a large bowl and add enough hot water to cover by 1 inch.
Let the fruit soak for 25 minutes, then dram well.
Place the soaked fruit, brown sugar, brandy, butter, salt, lemon juice, lemon zest, orange zest, and water in a large saucepan over high heat.
Bring the mixture to a boil, reduce the heat, and simmer for 30 minutes.
Pour the compote into a bowl, cool, and refrigerate until ready to serve.
Or you may also serve the compote warm.
