Puny's Brandied Fruit Compote
|Dried apricots||1 1⁄2 Cup (24 tbs), coarsely chopped|
|Pears||1 Cup (16 tbs), coarsely chopped|
|Pitted prunes||1 Cup (16 tbs), coarsely chopped|
|Dried cranberries||1 1⁄2 Cup (24 tbs)|
|Dried apples||2 Cup (32 tbs), coarsely chopped|
|Cherries||1 Cup (16 tbs), dried|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Brandy||1⁄2 Cup (8 tbs)|
|Unsalted butter||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Lemon zest||1 Tablespoon|
|Orange zest||1 Tablespoon|
|Water||3 Cup (48 tbs)|
Combine the dried fruit in a large bowl and add enough hot water to cover by 1 inch.
Let the fruit soak for 25 minutes, then dram well.
Place the soaked fruit, brown sugar, brandy, butter, salt, lemon juice, lemon zest, orange zest, and water in a large saucepan over high heat.
Bring the mixture to a boil, reduce the heat, and simmer for 30 minutes.
Pour the compote into a bowl, cool, and refrigerate until ready to serve.
Or you may also serve the compote warm.
