Gingered Pear Compote
|Water||2 Cup (32 tbs)|
|Sugar||2 Cup (32 tbs)|
|Lemon rind||1 Teaspoon|
|Ground ginger||1 Teaspoon|
|Bartlett pears/Bosc pears||6 , quartered|
|Pistachio nuts||3 Tablespoon, chopped|
1) Combine the water, sugar, lemon rind, and ginger, allow to boil and cook for 4 minutes.
2) Discard the lemon rind, add the pears in batches and poach until the pears are transparent.
3) In a glass serving dish, place the pears and pour the hot syrup over the fruit, then refrigerate.
4) Garnish with the chopped pistachio and serve immediately.
