Hot Fruit Compote
|Canned peach/Apricot halves||1 Pound (1 Can)|
|Canned pear halves||1 Pound (1 Can)|
|Canned plums/Greengage plums||1 Pound (1 Can, Purple Or Greengage)|
|Firmly packed light brown sugar||1 Cup (16 tbs)|
|Lemon juice||1⁄4 Cup (4 tbs)|
|Slivered orange rind||1 Tablespoon|
Preheat oven to 350° F.
Drain and measure 1 cup syrup from canned fruits and mix with sugar, lemon juice, and orange rind.
Arrange fruits in a large casserole, add sugar mixture, and dot with butter.
Bake, uncovered, 1/2 hour; serve hot with cream or cool and ladle over ice cream or pound cake.
