Minted Fruit Compote

Ingredients
  Nectarines 2 , pitted and sliced
  Plums 2 , pitted and quartered
  Water 1 Cup (16 tbs)
  Halved red seedless grapes 3⁄4 Cup (12 tbs) (Or Green)
  Quick-cooking tapioca 2 Tablespoon
  Frozen apple juice concentrate 2 Tablespoon
  Honey 1 Teaspoon
  Dried mint leaves 1⁄2 Teaspoon
Directions

In 2-quart casserole, combine all ingredients.
Microwave at High for 14 to 21 minutes, or until tapioca is tender and translucent, stirring twice.
Chill for at least 3 hours.
Serve cool.
