Fig And Melon Compote
|Freshly squeezed orange juice||1⁄4 Cup (4 tbs)|
|Freshly squeezed lime juice||2 Tablespoon|
|Chopped fresh mint||1 Tablespoon|
|Seeded diced melon||1 Cup (16 tbs) (Cantaloupe Or Crenshaw)|
|Fresh fig||2 Ounce, cut in half and sliced (1 Large Sized)|
1. In medium mixing bowl combine first 4 ingredients, stirring to dissolve honey; add melon and fig and stir to coat. Cover and refrigerate until flavors blend, at least 30 minutes.
2. To serve, into each of two 6-ounce dessert dishes spoon half of the fruit mixture and garnish each portion with a mint sprig.
