Winter Fruit Compote With Figs And Apricots
|Dried figs||3⁄4 Cup (12 tbs)|
|Dried apricots||3⁄4 Cup (12 tbs)|
|Dried prunes||3⁄4 Cup (12 tbs)|
|Rum||1⁄2 Cup (8 tbs)|
|Orange juice||1 1⁄2 Cup (24 tbs)|
|Seedless green grapes||2 Cup (32 tbs)|
|Purple grapes/Red grapes||1 Cup (16 tbs), halved and seeded|
|Mandarin oranges||1 Can (10 oz) (284 Milliliter, Undrained)|
|Grapefruit||1 , peeled and sectioned|
In saucepan, combine dried figs, apricots, prunes, rum and orange juice; cover and bring to boil.
Simmer for 10 minutes; remove from heat and let stand for 20 minutes or until fruit is plump and tender.
In serving dish, combine fig mixture, green and purple grapes, mandarin oranges and grapefruit.
Serve immediately or cover and refrigerate up to 3 days.
