Warm Pear Compote
|Firm ripe pears||5 , peeled, cored and cut into eighths|
|Dried cherries||1⁄4 Cup (4 tbs)|
|Ground cinnamon||3⁄4 Teaspoon|
|Ground nutmeg||1⁄2 Teaspoon|
|Apple juice||2⁄3 Cup (10.67 tbs)|
|Lemon juice||1 Teaspoon|
|Fat free frozen vanilla yogurt||1⁄2 Cup (8 tbs)|
Coat a 2-quart microwave-safe baking dish with no-stick spray.
Place the pears and cherries in the prepared dish.
Sprinkle the cinnamon and nutmeg over the fruit.
In a small bowl, mix together the apple juice, honey, vanilla and lemon juice.
Pour over the fruit and toss to coat.
Microwave the fruit, uncovered, for 5 minutes on high.
Micro wave for another 5 minutes.
Microwave for 2 minutes more, or until the fruit is soft and hot.
Let stand for 2 minutes.
