Sparkling Melon Compote

Ingredients
  Cantaloupe 1
  Honeydew melon 1⁄2
  Shredded coconut 2 Cup (32 tbs)
  Lime sherbet/Lemon / pineapple sherbet 1 Pint
  Catawba grape juice/Ginger ale 1 Cup (16 tbs), chilled (Sparkling)
Directions

Cut melon into balls with melon ball cutter.
Alternate cantaloupe and honeydew balls and the coconut in 4 parfait glasses.
Top each with a scoop of sherbet; fill glasses with grape juice.
