Winter Fruit Compote Spiced

Ingredients
  Dried prunes 6 , soaked in water until plump (With Pits)
  Dried apricots 6 , halved
  Pear 1 Large, cut into 6 wedges
  Tart green apples 1 Large, cut into 12 wedges
  Golden raisins 3 Tablespoon
  Lemon 1 , unpeeled, halved lengthwise and cut into 1/8 inch thick slices
  Vanilla bean 1⁄2 , split lengthwise
  Cinnamon stick 1⁄2 Small
  Water 2 Cup (32 tbs)
  Port/Sherry 6 Tablespoon
  Slivered blanched almonds 2 Tablespoon, toasted (For Garnish)
Directions

Combine all ingredients except almonds in large saucepan and bring to simmer over high heat.
Cover partially, reduce heat to low and cook until fresh fruit is very tender and dried fruit is plump (but not falling apart), 30 to 45 minutes.
Remove from heat and cool to room temperature.
