Apricot Compote

Were you looking for a tasty fruit dessert that you can serve for a dinner party? Then Apricot Compote is definitely the recipe for you. Apricot Compote is a lovely fruit dessert that your guests will love.
Ingredients
  Dried apricots 1 1⁄2 Cup (24 tbs)
  Boiling water 2 1⁄2 Cup (40 tbs)
  Fresh lemon slice 1
  Sugar 6 Tablespoon, firmly packed
  Raisins 3 Tablespoon
  Flaked almonds 1⁄2 Cup (8 tbs), toasted
  Whipped cream 1⁄2 Cup (8 tbs) (To Decorate)
Directions

1 Place the apricots in a 1.2 litre/2 pint (5 cup) mixing bowl, and pour over the boiling water.
2 Add the lemon and sugar and stir well.
3 Cover with plastic wrap, and pierce. Microwave on full power for 12 minutes stirring once after 6 minutes.
4 Stir in the raisins, then allow to cool completely. If possible, chill overnight.
5 Sprinkle with toasted almonds if using and serve with whipped cream.
