|Boiling water||2 1⁄2 Cup (40 tbs)|
|Fresh lemon slice||1|
|Sugar||6 Tablespoon, firmly packed|
|Flaked almonds||1⁄2 Cup (8 tbs), toasted|
|Whipped cream||1⁄2 Cup (8 tbs) (To Decorate)|
1 Place the apricots in a 1.2 litre/2 pint (5 cup) mixing bowl, and pour over the boiling water.
2 Add the lemon and sugar and stir well.
3 Cover with plastic wrap, and pierce. Microwave on full power for 12 minutes stirring once after 6 minutes.
4 Stir in the raisins, then allow to cool completely. If possible, chill overnight.
5 Sprinkle with toasted almonds if using and serve with whipped cream.
