Coffee Crepes Flambe
|Brown sugar||1⁄4 Cup (4 tbs), packed|
|Heavy cream||1⁄3 Cup (5.33 tbs)|
|Coffee liqueur||6 Tablespoon, heated|
|Whipped cream||1⁄2 Cup (8 tbs) (For Garnishing)|
Fold crepes in quarters.
In chafing dish combine brown sugar, cinnamon, and cream.
Heat to simmer, stirring continuously.
Add folded crepes and coat with sauce.
With a long match, ignite liqueur.
Pour into chafing dish while flaming and spoon over crepes.
Garnish with whipped cream before serving.
