Use coffee of medium grind (steel cut.)
For each 3 servings, mix 4 tablespoonfuls of coffee with 2 tablespoonfuls of beaten egg.
Add 1/4 cupful of cold water, stir and add 1 3/4 cupfuls boiling water.
Put over fire and bring to a boil.
As it begins to boil up, stir down to keep it from boiling over.
As soon as it actually boils, remove from fire and allow to settle from 3 to 5 min.
Pour at once from grounds.
Serve immediately.
The egg helps to produce a clear coffee; crushed egg shell may also be used for this purpose.
