Coffee Pot Roast With Vegetables
|Beef||2 Pound (For Pot Roast)|
|Tomatoes||1 Cup (16 tbs)|
|Water||1 Cup (16 tbs)|
|Black coffee||1 Cup (16 tbs)|
|Onion||1 , chopped|
|Carrots||6 , peeled and diced|
|Diced potatoes||2 Cup (32 tbs)|
|Frozen peas||10 Ounce (1 Package)|
Brown meat on all sides in heavy kettle, adding a small amount of fat if necessary.
Add tomatoes, liquids, salt, and pepper.
Bring to boil, cover, and simmer for 1 hour.
Add onion and carrot; simmer for 15 minutes.
Add potatoes and cook until vegetables are tender; then add peas and cook for a few minutes.
If desired, thicken gravy with flour blended with a little cold water.
