Cafe Latte Pudding

  Sugar 2⁄3 Cup (10.67 tbs)
  Unsweetened cocoa 1⁄3 Cup (5.33 tbs)
  Cornstarch 1⁄4 Cup (4 tbs)
  All purpose flour 1 Tablespoon
  Instant espresso granules 2 Teaspoon
  Salt 1⁄8 Teaspoon
  Milk 3 Cup (48 tbs)
  Butter 1 Tablespoon
  Vanilla extract 1 Teaspoon
  Frozen reduced calorie whipped topping 6 Tablespoon, thawed
  Chocolate coated coffee beans 6

1. Combine first 6 ingredients in a medium saucepan, stir well with a whisk. Gradually add milk, stirring with a whisk until well blended. Bring to a boil over medium heat, and cook for 1 minute, stirring constantly. Remove from heat, stir in butter and vanilla.
2. Spoon 1/2 cup pudding into each of 6 dessert dishes.
