Coffee And Marshmallow Foam
|Blanched almonds||1 Tablespoon, chopped|
|Strong hot coffee||37⁄100 Cup (5.92 tbs)|
|Milk||1 Cup (16 tbs)|
|Chopped glace cherries||1 Tablespoon|
|Orange peel||1 Tablespoon|
Put the marshmallows, cut into halves, into a basin and stand this over a saucepan of hot water.
Pour the coffee over the marshmallows and leave until dissolved.
Allow the mixture to cool, but not become really stiff again.
Stir in the whipped cream, or evaporated milk or custard, the nuts, cherries and peel.
Lastly fold in the very stiffly beaten egg whites.
Pile into glasses and decorate with tiny pieces of cherry or pineapple.
