Simple Poached Cod
|Cod tail||3 1⁄4 Pound|
|Lemon juice||3 Tablespoon|
|Onion||1 , sliced|
|Carrots||2 , sliced|
|Leek||1 , sliced|
|Celeriac||1 Small, peeled and sliced|
|Mixed herbs||3 Ounce|
|Mustard seeds||1⁄4 Teaspoon|
|Lemon||1 , sliced|
Sprinkle the fish with the lemon juice and leave to stand for 15 minutes.
Put the fish in a dish with 1 cup (250 ml/8 fl oz) water.
Arrange the vegetables around the fish and stir in the remaining ingredients.
Cover and microwave on HIGH for 10 minutes.
Turn the fish carefully and baste with the cooking liquid.
Cook for a further 10 minutes on HIGH.
Leave to stand for 5 minutes.
Divide the fish between four plates and serve with a spoonful of vegetables and a little melted butter poured over each portion.
