Saute Of Cod

Ingredients
  Butter 1 Ounce
  Cod fillets 4
  Onion 1 , chopped
  Garlic 1 Clove (5 gm), crushed
  Mushrooms 6 Ounce, sliced
  Tomatoes 1⁄2 Pound, skinned, seeded and diced
  Dry white wine 5 Tablespoon
  Salt To Taste
  Pepper To Taste
  Browned breadcrumbs 1 Tablespoon
  Chopped parsley 1 Tablespoon
Directions

Melt the butter in a frying pan, add the cod cutlets and cook gently for 10 minutes, turning once.
Transfer the fish to a serving dish and keep hot.
Add the onion and garlic to the pan and cook slowly until the onion is soft but not coloured.
Add the mushrooms and tomatoes and cook for a further 3 minutes.
Stir in the wine, bring to the boil and simmer for 5 minutes.
Check the seasoning and pour the sauce over the cutlets.
Mix together the breadcrumbs and parsley and scatter over the fish.
