Acadian Baked Cod With Vegetables

Ingredients
  Cod steak 1 Kilogram
  Lemon 1
  Salt 5 Milliliter
  Pepper 1 Milliliter
  Thyme 1 Milliliter
  Lemon 1⁄2
  Onion 1
  Tomatoes 2
  Potatoes 3
  Green pepper 1
  Butter/Margarine 30 Milliliter
  Parsley 50 Milliliter
Directions

Mix the lemon rind, salt, pepper and thyme, rub all over the fish.
Place in a 7 x 11-inch (18 x 28 cm) microwave-safe dish.
Sprinkle with the lemon juice.
Let stand 20 minutes.
Remove fish from dish.
Arrange half the onion, tomatoes, potatoes and green pepper in the dish.
Top with fish and add the remaining vegetables.
Melt the butter or margarine 1 minute at HIGH.
Add the parsley.
Pour over the vegetable topping.
Cover with waxed paper.
Bake 8 to 10 minutes at HIGH, basting once with juice in the dish after 3 minutes.
Let stand 3 minutes and serve.
