Spicy Cod Bake

Ingredients
  Cod fillets 1 Pound
  Mushrooms 1⁄2 Pound
  Carrots 2
  Onion 1 Medium
  Lemon juice 1 Tablespoon (Of 1/2 Lemon)
  Tomato juice 1 Cup (16 tbs) (V-8)
  Dry mustard 1⁄4 Teaspoon
  Vinegar 1 Teaspoon
  Worcestershire sauce 1 Teaspoon
Directions

GETTING READY
1. Preheat the oven to 425° F
2. Rinse cod and pat dry with paper towels
3. Chop mushrooms, carrots and onion finely

MAKING
4. Use a food processor (to make this job easy)
5. Spread half of this mixture in a greased baking dish
6. Arrange fillets in a single layer on top and sprinkle with salt and pepper
7. Squeeze lemon juice over the fish and spread remaining vegetable mixture on top of fish
8. Mix V-8, mustard, vinegar and Worcestershire sauce and pour over the fish
9. Bake at 425° F 10 minutes per inch of thickness

SERVING
10. Can be served with a sauce of your choice
