Ingredients
  Cod fillet 1 Pound, cut in 2-square-inch pieces
  Potatoes 4 Medium, peeled and quartered
  Carrots 2 Medium, scraped and cut into 2 inch pieces
  Lemon juice 1 Tablespoon
  Margarine 1 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Shredded part skim mozzarella cheese 1⁄2 Cup (8 tbs) (Made From Partially Skimmed Milk)
  Chopped parsley 2 Tablespoon
Directions

GETTING READY
1. Preheat oven to 375 °F.

MAKING
2. Slightly grease a 13 x 9-inch baking dish, place the fish pieces into it and sprinkle with lemon juice.
3. In between the fish pieces place carrots and potatoes along with dabs of margarine.
4. Placing pieces of potato over fish season with salt and pepper, sprinkle cheese over all, cover and bake for 1 hour.

SERVING
5. Serve hot with desired garnish.
