Bell Pepper Cod
|Cod fillets||1 Pound|
|Soy sauce||1 Tablespoon|
|Garlic clove||1 , crushed|
|Ground ginger||1 Dash|
|Bell peppers||2 Medium, cut into 1-inch pieces (Green, Red Or Yellow)|
|Fresh mushrooms||8 Ounce, cut in half|
1. If fish fillets are large, cut into 4 serving pieces; pat dry. Arrange fish, thickest parts to outside edges, in square dish, 8 x 8 x 2 inches. Mix soy sauce, garlic and ginger; brush on fish. Top with vegetables.
2. Cover tightly and microwave on high 8 to 12 minutes, rotating dish 1/2 turn after 4 minutes, until fish flakes easily with fork and vegetables are crisp-tender. Let stand covered 3 minutes.
