Smoked Cod Deluxe

Ingredients
  Hard cooked eggs 2 , diced
  Diced pimento/Pickle relish 1 Tablespoon
  Mayonnaise 50 Milliliter (1/4 Cup)
  Lemon juice 15 Milliliter (1 Tablespoon)
  Unseasoned white sauce 250 Milliliter (1 Cup)
  Skim milk 250 Milliliter (1 Cup)
  Smoked cod fillets 1 1⁄2 Pound
  Grated parmesan cheese 30 Milliliter (2 Tablespoons)
Directions

Stir the first four ingredients into the white sauce and keep hot in a double boiler.
Heat the milk in a large skillet and add cod cut into 6 serving pieces.
Cover and simmer just until fish flakes easily, about 8 minutes.
If using frozen fillets, cook for 12 minutes.
Drain 3/4 cup (175 mL) of fish liquid into the sauce and stir lightly.
Arrange fish in a shallow bake pan and pour sauce evenly over the top.
Sprinkle with cheese and broil until lightly browned.
