Ingredients
  All purpose flour 3 Cup (48 tbs)
  Desiccated coconut 1⁄2 Cup (8 tbs)
  Baking soda 1⁄2 Teaspoon
  Butter/Margarine 1 Cup (16 tbs), softened
  Granulated sugar 1 Cup (16 tbs) (250 Milliliter)
  Egg 1
  Orange juice 50 Milliliter (1/4 Cup)
  Orange rind 25 Milliliter, grated (2 Tablespoon)
Directions

Combine flour, coconut and soda; mix well.
In mixing bowl, cream together butter, sugar, egg, orange juice and rind.
Stir in flour mixture and blend well.
Shape dough into 2 rolls 1-1/2 inches (4 cm) in diameter.
Wrap in waxed paper and chill until firm, about 4 hours or overnight.
Cut dough into 1/8 inch (3 mm) slices and place on ungreased baking sheets.
Bake in 375°F (190°C) oven for 8 to 10 minutes or until golden.
