Orange Coconut Crisps
|All purpose flour||3 Cup (48 tbs)|
|Desiccated coconut||1⁄2 Cup (8 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Butter/Margarine||1 Cup (16 tbs), softened|
|Granulated sugar||1 Cup (16 tbs) (250 Milliliter)|
|Orange juice||50 Milliliter (1/4 Cup)|
|Orange rind||25 Milliliter, grated (2 Tablespoon)|
Combine flour, coconut and soda; mix well.
In mixing bowl, cream together butter, sugar, egg, orange juice and rind.
Stir in flour mixture and blend well.
Shape dough into 2 rolls 1-1/2 inches (4 cm) in diameter.
Wrap in waxed paper and chill until firm, about 4 hours or overnight.
Cut dough into 1/8 inch (3 mm) slices and place on ungreased baking sheets.
Bake in 375Â°F (190Â°C) oven for 8 to 10 minutes or until golden.
