Spicy Meat In Fried Coconut
|Coconut||3⁄4 Cup (12 tbs), grated|
|Round steak||1 Pound, cut in 1/2 inch cubes|
|Olive oil||1 Tablespoon|
|Onion||1⁄4 Cup (4 tbs), chopped|
|Garlic||1 Clove (5 gm), minced|
|Curry powder||2 Teaspoon|
|Brown sugar||2 Tablespoon|
|Lime juice||1 Tablespoon|
|Bay leaf||1 , crushed|
|Water||1 Cup (16 tbs)|
|Soy sauce||1 Tablespoon|
Cook coconut in skillet over low heat until brown, stirring constantly.
Remove and reserve brown meat in oil in skillet; add onion and garlic.
Cook until onion is tender; add remaining ingredients.
Simmer for 1 1/2 hours, adding additional water if necessary; add coconut.
