Yam N Coconut Casserole
|Yams||4 1⁄2 Pound, cooked and peeled (12 Medium Sized)|
|Brown sugar||3 Tablespoon|
|Cream||3⁄4 Cup (12 tbs)|
|Flaked coconut||7 Ounce (1 Package)|
|Diced tart apples||2 Cup (32 tbs)|
|Butter/Margarine||1⁄3 Cup (5.33 tbs), melted|
Cut yams into pieces; put into a large bowl.
With an electric mixer, beat in brown sugar, cream, and half of coconut.
Beat until smooth.
Stir in diced apples.
Turn mixture into a buttered 2 1/2-quart baking dish.
Toss remaining coconut with melted butter.
Sprinkle evenly over top of yam mixture.
Bake at 325Â°F about 30 minutes, or until coconut is lightly browned.
