Lemon Coconut Squares
|Flour||1 1⁄2 Cup (24 tbs)|
|Confectioners sugar||1⁄2 Cup (8 tbs)|
|Cold butter/Margarine||3⁄4 Cup (12 tbs), sliced (1 1/2 Sticks)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Lemon juice||1⁄2 Cup (8 tbs)|
|Baking powder||1 Teaspoon|
|Flaked coconut||3⁄4 Cup (12 tbs)|
Preheat the oven to 350 degrees.
Combine the flour and confectioners sugar in a bowl.
Cut in the butter until crumbly.
Press into a lightly buttered 9xl3 inch baking pan.
Bake for 15 minutes.
Remove from oven Combine the eggs, sugar, lemon juice and baking powder in a mixing bowl; beat until smooth.
Pour the egg mixture evenly over the crust; sprinkle evenly with the coconut.
Bake for 20 to 25 minutes or until golden brown.
Remove from oven to a wire rack to cool completely.
Cut into bars.
