Crunchy Coconut Cookies
|Flour||1 Cup (16 tbs), sifted|
|Baking powder||1⁄2 Teaspoon (Preferably Calumet)|
|Butter/Other shortening||1⁄2 Cup (8 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Granulated sugar||1⁄2 Cup (8 tbs)|
|Coconut||1 1⁄2 Cup (24 tbs) (Preferably Baker's)|
|Toasties||2 Cup (32 tbs) (Preferably Use Post)|
|Vanilla/2 cups grape nuts flakes / post 40% bran flakes||1⁄2 Teaspoon|
Sift flour once, measure, add baking powder, soda, and salt, and sift again.
Cream shortening, add sugars gradually, and cream together until light and fluffy.
Add egg and beat well.
Add flour, coconut, cereal, and vanilla.
Shape into small balls and place on ungreased baking sheet.
Press down with fork.
Bake in moderate oven (350Â°F.) for 15 minutes, or until done.
