|Creamed coconut||2 Ounce (50 g)|
|Water||6 Fluid Ounce (175 ml)|
|Limes||2 , grated rind and juiced|
|Garlic||1 Clove (5 gm), crushed|
|Chilli powder||1⁄2 Teaspoon|
|Spring onions||2 , chopped|
|Fresh ginger root||1 Inch, crushed|
1) In a pan, add coconut, water, lime rind, garlic, chilli powder, spring onion and root ginger.
2) Gently cook for 10 minutes while stirring constantly.
3) When the coconut dissolves and the flavours are well blended, cool.
4) Use as required.
5) Goes well with prawns or fish.
