Toasted Coconut Tapioca

Ingredients
  Light coconut milk 3⁄4 Cup (12 tbs)
  Fat free milk 3⁄4 Cup (12 tbs)
  Sugar 3 Tablespoon
  Egg substitute 2 Tablespoon
  Quick-cooking tapioca 4 Teaspoon, uncooked
  Salt 1 Dash
  Vanilla extract 3⁄4 Teaspoon
  Sweetened, flaked coconut 2 Tablespoon, toasted
Directions

1. Combine first 6 ingredients in a small saucepan; stir well, and let stand 5 minutes. Bring to a boil over medium-high heat, stirring constantly. Remove from heat, and stir in vanilla. Spoon pudding into dessert bowls. Cover surface of pudding with plastic wrap, and chill until thick. Sprinkle with coconut just before serving.
