Coconut Crusted Apple Dessert
|Tart apples||6 Large (Filling)|
|Brown sugar||1⁄2 Cup (8 tbs) (Filling)|
|Orange juice||1⁄4 Cup (4 tbs) (Filling)|
|Cinnamon||1⁄2 Teaspoon (Filling)|
|Mace||1⁄2 Teaspoon (Filling)|
|Flour||2 Tablespoon (Filling)|
|Firmly packed brown sugar||1⁄2 Cup (8 tbs) (Topping)|
|Flaked coconut/Desiccated coconut||1⁄2 Cup (8 tbs) (Topping)|
Pare, core and slice apples.
Heap 2" deep in a greased 8" round baking dish.
Combine V2 cup brown sugar, spices and 2 tblspns, flour; sprinkle over apples.
Pour orange juice over all.
For the topping, blend V2 cup brown sugar, butter and 1/3-cup flour with a fork until crumbly.
Stir in coconut.
Spread over apples.
Cover with aluminium foil.
Bake in a hot oven - 425° F - for 2 minutes.
Remove foil; bake for 15 minutes longer, or until apples are tender.
