Coconut Date Slices

Ingredients
  Dates 1 Cup (16 tbs), chopped or cut
  Sugar 3⁄4 Cup (12 tbs)
  Eggs 2 , well beaten
  Walnuts 1 Cup (16 tbs), chopped
  Vanilla 1 Teaspoon
  Coconut 2⁄3 Cup (10.67 tbs) (Bakers Angle Flake)
Directions

Combine dates, sugar and eggs in 10-inch skillet.
Cook over medium heat, stirring constantly, until mixture pulls away from sides of pan, about 5 minutes.
Remove from heat.
Stir in nuts and vanilla, then carefully stir in cereal and cool slightly.
Moisten hands in cold water and shape mixture into two 6-inch logs, about 1 1/2 inches in diameter.
Roll in coconut, wrap in waxed paper and chill at least 1 hour.
Cut into thin (about 3/8 -inch) slices.
