|Hot water||9 Fluid Ounce|
|Caster sugar||13 Ounce|
|Vanilla essence||1 Teaspoon|
|Desiccated coconut||3 Ounce, toasted|
Sprinkle the gelatine in the hot water, then pour into a large bowl.
Add the sugar and essence and stir until the sugar has dissolved completely.
Whisk vigorously until the mixture has become very white and almost milky in appearance.
It should have doubled in volume too.
The longer you beat the mixture the lighter it will be.
When the beating has thickened considerably, pour into a well greased square baking tin.
Cover with cling film and chill for a few hours.
After this time cut into squares and roll in toasted coconut.
