Pipis Stir Fried In Coconut Milk

Ingredients
  Peanut oil 1 Tablespoon
  Brown onion 150 Gram, chopped coarsely (1 Medium Piece)
  Grated ginger 1 Tablespoon
  Garlic 2 Clove (10 gm), crushed
  Chopped lemon grass 1 Tablespoon (Use Fresh)
  Ground cumin 2 Teaspoon
  Ground coriander 2 Teaspoon
  Ground turmeric 1 Teaspoon
  Pipis 1 Kilogram, prepared
  Lime juice 2 Tablespoon
  Fish sauce 2 Teaspoon
  Coconut milk 400 Milliliter
  Brown sugar 2 Teaspoon
  Choy sum 500 Gram, chopped coarsely
  Coriander leaves 2 Tablespoon
Directions

1.
Heat the oil in wok or large pan, add onion, ginger, garlic, lemon grass and ground spices; stir-fry until fragrant.

Add rinsed and drained pipis, juice, sauce, milk and sugar; stir-fry until pipis open, discard any that do not open.
3.
Add choy sum; stir-fry until leaves are just wilted.
Serve sprinkled with fresh coriander.
