Make a hole in the coconut with an ice pick and drain and reserve 1 cup milk.
Remove the shell and rind and grate the coconut meat.
Combine the coconut milk, 3 cups water and the sugar in a saucepan and bring to a boil.
Boil, stirring until the sugar is dissolved, for 5 minutes.
Add 4 cups grated coconut to the sugar and boil until clear.
Pack the coconut in hot jars, then cover with boiling syrup and seal.
