Bicol Express is basically some pork cooked in coconut milk with a lot of chili peppers. The chili pepper is what makes it “Bicol Express.” Without the chili peppers, the Bicolanos won’t consider it Bicol Express.
3 , sliced (Or To Taste)
3⁄4 Cup (12 tbs)
1 Medium, minced
Mix all ingredients in a saucepan.
Simmer for a very low heat for a very long time.
If you see that the sauce has thickened up, then it’s done. Cook it to the consistency that you like.
